1. Heat broiler. In a bowl, combine ingredients. Season with salt & pepper.

the recipe calls for gold potatoes, I subtitute those for sweet potato sticks and bake them the broccolini. Adds a great flavor and take away the heaviness of the smashed potatoes.
Super yummo! I'd recommend trying to get low sodium varieties of tomato sauce and cheese if possible, I was surprised when I saw what the sodium content was!
This is my version of a recipe I found on the internet. It is a little high in calories and fat, but the portions are fairly large so you could serve yourself a slightly smaller portion. Or, you could do like I do and save this recipe for a day when you eat a smaller sized breakfast and lunch. Add a side salad and your have a delicious meal!
