Easy and quick to make pasta dish wonderful for summer with a fresh taste of lemon juice
This recipe was inspired by John Campbell who has a great recipe for lasagne. I modified it to my taste and thinned it to use with pasta. It is a large recipe and is meant to be used with an entire pound of pasta. I set the servings at 10 but it can easily go further.
I grew up in an Italian household and this is the closest I have seen to Grandma's sauce. Enjoy.
Red lentil pasta is a great way to cut carbs and get some protein. The ground beef is for flavor more than for protein. To make this Vegan omit the beef and use veggie crumbles or cooked green lentils if desired. (But this will alter nutritional count) Serve with a tossed salad.
My family loves this recipe. It is pretty easy to make, sometimes I add mushrooms and sometimes spinach. Make it your own.
Something I made up that rocked. I made this a one dish meal by browning chicken in butter adding water to just cook spaghetti, but not too much so it would evaporate by the time the noodles were done. I also used fresh spinach but I am sure that you could use frozen and add in when spaghetti noodles were half done. This worked nicely for me, but I was just experimenting with what I had around the house.
Great for summer, you can really use any veggies that are in season or that you have in the fridge. The key is to boil the noodles a minute or two longer so they are extra tender (and don't need to be baked)
