This modified meatloaf is the leanest I could get it with good flavor. Lots of veggies! If your grocery store freezer doesn't have the mirepoix mix, just dice up a pound of carrots, celery and onions very tiny. Makes a huge batch for having lots of leftovers.

I love chicken marsala and will often order it whenever we go out for Italian. I've made a few versions and this one is by far my favorite. The almond meal gives the chicken another twist of flavor that goes very well with the sweet marsala wine. I usually serve this with brown rice to sop up the extra juices
adapted from copycat internet recipes... now using turkey sausage, frozen organic potatoes, etc...
I used to make this with ground beef, but I have changed it up some to make it less fating. I also use ground venison (deer) instead of turkey sometimes.
My family loves this with the venison mixture but can use lean ground beef.
