I really like the Smart Ones Baked Ziti...and decided to make it myself! Although this has more fat, and less calories...still delicious and easy to make.
Great simple homemade marinara sauce with boneless/skinless chicken thighs instead of ground beef. The thighs add much more flavor instead of using chicken breasts.

Traditional Italian-style Caprese salad tossed with spinach, balsamic vinegar, and red onion.
This is also a really good slowcooker meal just add all the ingredience turn on low and let it go for 6-8 hours.
I have servered this with whole grain pasta. or with gritts or polenta, or just on its own with a salad is great.
Orzo with Italian cold cuts, cheese and Italian dressing. Best served chilled.
Made in one skillet. Delicious. You'll think you were at an Italian street festival. Serve on bread or plain. You can also add a bit of your favorite tomato sauce and top with mozzarella and grated Romano cheeses for a rich delish dish.
