I cooked this up to minimize calories and fat and also to incorporate some healthy veggies from our local farmer's market. I just love the Hunt's Zesty and Spicy Spaghetti sauce-it has great flavor and you can use it as a base for many things! The bread just helps everything come together and thickens it up so it is nice and hearty!
Loose Interpretation of the Olive Garden Favorite. It's much thicker than soup. The can of diced tomatoes I used had garlic in it. If you can't find the ditalini pasta, small shell pasta works too.

The potatoes are optional but thicken up the soup nicely! I also used prosciutto filled tortellini instead of the cheese ones.
5 chicken breasts. Boil until tender, cool then cube
3 cans (15oz each or so) Great Northern Beans, undrained
2 cans (15 oz each or so) Rotel Tomatoes and green chilis
1 small can (4oz) chopped green chilis
49 oz (6 cups) chicken broth (swanson low sodium)
1 160z reduced fat sour cream
3 cups shredded monterey jack cheese (low fat if you can find it!)
2 tsp cumin
2 cloves garlic - chopped
1 medium onion chopped

A basic easy marinara sauce. One half cup or 4 oz. equals one serving. Entire recipe yields 3 1/2 pounds, or 56 ounces (14 servings).
This is a homemade sauce that makes plenty to freeze, and is SO amazing with no salt added! "Less is more" works here.

I love eggplant and asparagus, so am always trying to find a way to combine them. I could only get 3 on the plate for the pic. Based on the farily decent calorie count, you can pair this with a nice side dish of pasta tossed in EVOO and spices!
