This is a delicious topper for spaghetti that they used to serve at the Old Spaghetti Factory. If you haven't yet tried liver, this is definitely the meal for you. Chicken livers are an extremely lean protein chock full of Vitamins A and B-12 as well as Iron, and they have a surprisingly rich (but not overpowering) flavor. I loved them even as a child!
We served this with a 1/4 iceberg lettuce wedge, low-fat dressing and a corn on the cob niblet and still had a complete meal of less than 500 calories.
Healthy alternative to meatballs.
I did not include the sauce in this recipe as you can add what ever sauce you want after meatball are done cooking
Make this quick, easy and delicious recipe with just a few ingredients. I used Barilla sauce and spaghetti, but you can use your favorite. Just use one 24 oz. jar of sauce and one 13.25 oz pkg of spaghetti (about 3/4 of a 1 lb pkg).
Mix everything and make into meat balls. Place on Baking sheet and cook for 15 min. Put in your favorite sauce,

I start my pasta water then the sauce base and then the chopping. The cooking itself goes very quickly so by the time the pasta is cooked the shrimp and sauce is ready.
Most recipes for saltimbocca, whether chicken or veal, start with pounding the protein of choice to a certain thinness, and then folding over the flattened result. While pounding out meat can be a good release of tension, it's also a bit of a hassle, especially if you're like me and are somewhat paranoid about too much handling of raw meat and cleaning up afterward. In my method, I simply butterfly the chicken breast (i.e. cut it ALMOST completely in half but keeping it in one piece, then fold it open like a book). I also brown the chicken on top of the stove in an oven proof pan and then finish the chicken IN the oven. The chicken is almost guaranteed to come out moist, delicous, and fully cooked. Of course parmagiano reggiano is the usual cheese of choice, but I've found that smoked mozzarella is also a fine alternative.
