My mom used to make something similar, but i jazzed it up a bit and my family just loves it.
A quick mac & cheese recipe that makes a hearty dinner with minimal effort. I normally make this with tons of butter, and with the butter omitted it t turned out a little bland so I'm looking for suggestions to flavor it up without adding a lot of time or calorie count.
This recipe is adapted from a recipe by Lois Gordon I found on Allrecipes years ago. I have slightly healthified it by using partly whole wheat flour, changing the original vegetable oil to coconut oil, and adapted it for mini muffins. You could go even further by using nonfat yogurt, fully whole grain flour, and a smaller amount of mini chocolate chips.
I usually use sugar in this recipe but replaced it with Splenda and it was still very good!
I saw needed to use some expiring fresh corn tortillas and got this idea off of another user who made Corn Tortilla Chips with olive oil and salt. I didn't want to use oil and add more fat, so.....hence the water. Makes 6 servings of 6 chips each.
My kids love Hawaiian pizza so I decided I would try my hand at making it. I seasoned the crust to make it a bit better and used low fat Canadian bacon and unsweetened pineapple.
My husband actually made this and measured all the ingredients out for me! I was very greatful that I could share one of his smoothies. He loves to make them for the kids on the weekends. The yogurt is actually low fat I need to fix that in my nutrition data title.
I tried to make a healthy fruit shake with nuts and chocolate chips, but it didn't turn out as great calorie and fat wise as I wanted. Next time I will use less chocolate. It tastes great and is loaded with fruit and nuts, though.
I'd been eating some not so healthy foods lately and was craving something more nutritious. So I promised the kids we'd whip up a smoothie the next morning this delicious treat came out. My husband complimented it! I added a teaspoon of fiber sure to mine afterwards and ate it with some Morning Star sausage links (not in the nutritional info). Good breakfast!

Oh no, another fried okra recipe! Yes, but this one is different. It uses crushed cashew nuts (which if you can't buy locally, can be substituted) and toasted wheat germ and sesame seeds for added fiber. My boys all love it and it's eaten up every time I make it.
This is an "old fashioned" Southern chocolate chip cookie recipe. It is very similar to a Toll House recipe only without nuts. Chocolate - just chocolate - please!
The original recipe called for 28 ounces of pork & beans. But the calorie amount was so high that I decided to only use half the beans and then cut down a little on the bbq sauce accordingly. With the beans, it's a way to get more fiber into your sandwich.
