This is a recipe I found from Pillsbury and I use my favorite Enchilada Sauce
This recipe is from the Omni Diet book. Is is vegiterian, dairy free, gluten free, sugar free, and really delicious! LOADED with nutrients! Don't worry, you won't taste the spinach!

they are kinda dry, I top them with no sugar jelly... or spray it with butter flavored pam and sprinkle with splenda yum!
My son is allergic to egg and dairy products, so I adapted this for him from a recipe that my mother gave me. These muffins aren't very sweet, but you could add some extra sugar or splenda to the recipe if it is not to your taste. I don't advise replacing all of the sugar in the recipe with splenda (or any other sweetener), since it could have an effect on the over-all result of the muffins. If you don't mind a couple of extra calories, try adding some white chocolate chips or nuts to the recipe.
My father in law wanted a healthier version of this bread he likes from a local market. With no recipe available this is what I came up with! (Version 1) If you try this recipe please leave a comment how you like it and what you would change to make it more healthy! Next version will be a little lower carb as FIL is on a low carb diet. You could use any of your favorite fruits to add to this delicious and healthy smoothie. Great for breakfast, or a snack. My daughter even loves it! I like my fruit frozen to make it extra thick (Great tip is to put almost 'too ripe' bananas to be peeled and put into the freezer til you want to make this!)
