spray large muffin tin with non stick spray then mix all the ingrediants together (save some of the tomato sauce for the top) and put in muffin tins and put some of the tomato sauce on the top. Back at 425 for 45 minutes.
This is the low carb version of the Impossible Pie. This can be changed by using different veggie, different cheese, adding some meat. Using onion instead of mushrooms and olives.
3/4 cup Birches Pancake mix
2/3 water (recipe instructions)
3 Tbsp Ricotta Cheese
1 egg
1 tsp vanilla extract
Sprinkle in cinnamon to taste

1/4 cup, Heavy Whipping Cream
3 slices diced Oscar Mayer Bologna (80 calorie slice)
1/2 cup Bongards 3 cheese pizza blend (90 calorie 1/4 cup)
Great for those of us that don't eat or don't like beans. Has little kick, but not too spicy even for children to eat. Garnish with avocado, cilantro and a squeeze of lime juice.

This is my own recipe. I call it Miracle Chops simply because it's made with Miracle Whip. It's also very versatile. You can use whatever spices you want if you don't like the mix of spices I used. The breading turned out nice & moist. I'm sure you could use mayo in place of the Miracle Whip if you want.
No time to cook on weekday mornings? Mix this up the night before, then pop in the oven as you're getting ready for work. Could also add spinach, tomato, or other veggies.
Goes great with garlic mashed potatoes and asparagus. Can serve pork the next day with cheese on a sandwich.
