Since our local Uno's closed down, I could not have my favorite dish from them any more. So, through some trial and error, I've created a dish that I love just as much as their Baked Stuffed, but is nearly half of the listed calorie content!
This is adapted from a recipe that includes noodles, but I am avoiding wheat now, so I tweaked the original recipe.
I put this together when I was on South Beach Phase 1 and needed more fiber. I was soon hooked! You can add some sweetener and vanilla if you wish.
I was in a bind and used real butter when I made this, but to cut back on calories and fat you should use smart balance or something similar, and you can always use less to taste. You could even use butter flavored powder!
This is my take on a very unhealthy dish called armadillo eggs served at a local restaurant. There's looks like an egg, and it's deep fried. Mine captures the essential flavors, but is much healthier.

Trying to find a simple icing for the easy mug cake. As icing, the measure would be smaller but as the snack fluff, it is 1/6th of the product. Muscle is Protein Powder I used in place of sugar. Adds protein and keeps the carbs lower.
Still trying for a low sodium dressing without too many calories either. You can add minced onion and other ingredients, but remember they spoil faster.
No Bun Reuben. Just add Swiss Cheese and Dressing. Or use to put on your favorite bread.
