I found the original recipe here on Sparkpeople but made a few alterations to it for my needs and tastes.

I made vegetable broth by freezing all my veggie peelings for a month, wrapped in foil, and then heating them up in water for a few hours and straining out the vegetable bits. Then I added leftovers from a chicken / brown rice dinner, and voila! Chicken Soup with Rice

This is a great dish that can be filling while still keeping the fat low with a decent amount of protein. This is not an authentic Phillipino dish but it is inspired by one that a Phillipino co-worker made for me years ago.
