This chilli is very yummy and not very spice for those of you who have a hard time digesting spicy foods!
This recipe consists solely of fresh vegetables and some lime juice--and no fat. Pico de gallo [pronounced PEEK-oh day GUY-oh] can be served as a salsa or heated with Velveeta Lite cheese to make a tasty chile con queso.
For chile con queso, heat 3/4 cup pico de gallo with 1.5 slices Velveeta Lite cheese until cheese is melted and the vegetables are hot.
Make chips by heating 3 tortillas--but only one tortilla at a time, cut into 8 triangles--on a plate in the microwave for 1 to 1.25 minutes.
Filling and so much like the real thing you wonder if it isn't real meat!
If you are Vegan like me make sure you buy the Worthington ground beef without dairy! They have both. This is a great dinner for guests. Also freezes well and can be reheated for lunch at the office.
My spiced up spin on plain guacamole. Serve with tortilla chips or veggie slices. My guacamole is a hit at parties!

Whenever I invite guests over during the summer, I serve plenty of guacamole because it's so popular! Many friends have told me that their guacamole is not nearly as tasty and I think I know what the trouble is: Make sure that your avocados are completely ripe before cutting them open. Press the skin of the avocado, it should give slightly, the same way when you squeeze an orange. I buy mine 2-3 days before my party and store them on the windowsill. If your guacamole tastes bland it might need more lime juice and salt, taste as you mix.

This recipe is not including a tortilla or salsa or pico or cheese etc.. this is strictly for the beef inside. the salt pepper is to taste but i had to pick an amount.

This is an alteration of another recipe I found here on SparkPeople, but that one had a little more fat and less fiber, and used a different method for cooking the filling. This is a great, fun recipe for families or potlucks, and a staple in our house.
