A nice light Chili in weight and color. Sometimes those tomato based soups get old. Adapted from LANEEE's Slow Cooker White Chicken Chili.
An easy, healthy, and frugal way to prepare taco meat. Dry beans add fiber, take out the fat, and lower the cost! No prep, just throw everything in the morning and have the start of a great meal ready by supper time!
This is a great cold shrimp soup. A favorite in our house!! Had this in a mexican restaurant and had to come home and re-create it myself. I actually think my version is better than theirs. I also add jalapenos or 1/4 cup prepared horseradish on occasion.
Tucked into tortillas, with corn and black beans, or atop a bed of lettuce, this is a delicious staple at our house. Easy crowd pleaser!
A nicely balanced recipe from Whole Foods...and loaded with fiber and vitamins.
I was stopping by a Hispanic neighbor's apartment, and they were serving these tasty economical eggs, pinched with tortillas and eaten without silverware.
Have you ever had that wonderful white trash taco salad made with Doritos, taco meat, tons of cheese and an entire bottle of Catalina/French dressing? Oh yeah, I believe there may be some lettuce in there also. I personally love the stuff but DON’T love the calorie count (I calculated it at over 1,000 calories per serving!!). I prefer to splurge on dessert and tend to choose healthier options for my meals.
Well, I don’t see why I can’t have my cake and eat it too, so I took that atrocity of a “salad” and turned it into something I could feel good about eating on what is now almost a weekly basis. It has become one of my favorite go-to meals b/c it’s easy and so tasty. Plus, I like big portion sizes and the bulk of the lettuce allows you to get a big plateful for about half the fat and calories of the original recipe. Now that’s what I’m talkin' 'bout.
This tastes just like Weight Watcher's Smart Ones frozen Santa Fe Rice and Beans meal, only it is much lower in sodium, and it has chicken! YUM! It makes a ton, so invite friends or plan to have lots of leftovers. The whole family loves this dish! It tastes much naughtier than it is!!
My husband just loves Santa Fe Chicken Soup. After trying several recipes, this is the way we like to make it! Yummy!
Acorn Squash Stuffed with Black Beans, Pine Nuts, Tomato, Scallions & Cheese
