Great recipe for a healthy but not always yummy food. I add lots of black pepper and a little grated parmesan cheese if I need a little extra calcium. Can be refridgerated and used as a snack or a side for up to week after cooking. PREP TIME CUT BY AT LEAST 20-25 MINUTES IF USE FROZEN SPROUTS, but fresh tastes better!

Time required: 4 hours for marination, 60 to prep and cook.

You will need to have access to a Whole Foods store, or else make the stuffing yourself.

This dish is absolutely to-die-for delicious, and great on a hot summer night. It is as packed with nutrients as it is with flavor!

I invented this recipe randomly one night after being inspired by the feta salad I picked up from Whole Foods.

Feel free to sub couscous for the orzo if you prefer.

If you can't find Egusi seeds, you can substitute pumpkin seeds. Any combination of crab, shrimp and smoked fish can be used in place of the shrimp. Olive Garden has a tempting Chicken and Shrimp Carbonara, but it has over 1400 calories and 3 grams of sodium. With stats like these, I could only afford a tiny taste and I want to enjoy the whole dish.

While the original dish has shrimp, I want to simplify the preparation by limiting the proteins. Ronzoni Smart Taste pasta is a good compromise between whole grain pasta and white flour pasta. The egg substitute can be replaced with egg whites you don't keep both whole eggs and egg substitute at home.

"PMS Savior" Trail Mix!

Desperate for chocolate, popcorn, and salt, I stopped and created this at home. Stove-popped popcorn in coconut oil was my base, and I added other items I had on hand (all measured and portioned out into 7 different baggies). This could EASILY be adapted and made lower-calorie, but I'm happy with what I have!

My next variation will switch out the M&Ms for organic chocolate chips, but I wanted to use these M&Ms up in a healthier way.
