This is a delicious and filling soup with a resturant-quality flavor, able to stand on it's own as a main entree. I choose to use butter for this recipe because it is a natural ingredient. Because of the amount of onions, you really can't cut back on the amount of butter.
Great way to use up those thanksgiving leftovers!
I have also used mashed sweet potatoes. Start with step #2 and add the sweet potatoes with the turkey at the end. Turns out more like a "cake".

I started making this years ago; my husband loves it! I was so excited to realize it was "clean." I've modified a recipe from one out of a cookbook we received when we opened our first checking account as a married couple.
Add 1/2 tsp salt as well.
For the eggs it should read 3 eggs [you could use eggbeaters instead]
This recipe for those of you following w.watcher's is one point.
Pre-heat oven to 350 F or 175 C
1. Thaw spinach
2. Mix all ingredients
3. Spray a muffin tray [12 muffins] with cooking spray like Pam.
4. Pour spoonfuls into each muffin slot.
]5. Bake at 350F for 45-50 minutes.
My hubby loved this recipe. I used full fat cheese, normally would use low/no fat. You could totally change the taste of these by substituting chopped onion and a bit of feta instead.
I haven't made this recipe but it looks good. I needed the details for those I've already eaten!
