Brown chopped onions and diced garlic in olive oil. Add meat and cook until brown. Add pre-cooked brown rice and mix with spices, tomatoes, and pre-cooked corn stripped off the cob. Load mixture into bell pepper halves and bake at 375 for 30 minutes.
A hint of brown sugar rounds out the flavors of the smoky, robust spice rub. Although this recipe serves two people, you can easily double or even triple the ingredients to serve more.

1. Brown ground beef and drain excess fat
2. Chop vegetables and mince garlic
3. Add all ingredients to slow cooker and heat on high for 2-3 hours depending on thickness desired.
4. Add spices to taste.
Easy, quick and cheap. It's definitely nothing fancy and there are other variations of this recipe out there, but my kids enjoyed it. :)
There are many ways to make this. you can use your favorite cheese, canned or fresh tomatoes. you can use the old el paso seasoning but the taco bell is better with the added chilli pepper and cumin. i have used buffalo meat in this recipe as well. Modification of my mother's 50 year old recipe. Originally with all ground beef, adjusted with hot Italian sausage, mozzarella, and cottage cheese.
brown meat, add vegetables, cook for a bit, add mushroom soup and sourcream.
put in casserole dish top with grated cheeese and bake for 1/2 hour.
Good toped with salsa or hot sauce
