Slightly modified from my mom's version -- more eggs for protein, multi grain and sourdough bread for flavor and variety. Not sure if the amounts are quite right -- will tweak it and update as needed.
I'd leave off the club crackers on top except my kids like a crunchy topping.
This recipe is from Giada DeLaurentis. She uses 1 stick of butter, heavy cream, and 2 lbs of shrimp for 4 people. I cut it down to 2 tbsp of butter and more EVOO, use canned nonfat evaporated milk, and 1 lb of shrimp for 4 people.

5 oz. baby spinach leaves
2 vine ripened tomatoes, sliced
2 c. hot water
1 bay leaf
1/2-3/4" piece fresh ginger, peeled
1 lemongrass stalk
2 cloves garlic, peeled
1 Kaffir lime leaf, or juice of lime
1 tsp. fresh miso paste
7 oz. piece fresh monkfish
large handful fresh tarragon
1 tsp. olive oil
I needed a quick hot lunch so I made this from the ingredients at hand. I liked it enough that I would make it again. The Thai Chili tuna and the figlet add a little sweet and spicy to the dish. Would be good with plain tuna or chicken instead of the Thai Chili flavor, but I'd add some chili powder.
