This is a good EASY meal to cook when you short on time (and money)! We like to add fresh mushrooms or peas to it too (not included in calorie count)!
Low in fat, high on taste! This is so easy and quick to make, too! Basically, use 1 tablespoon of parmesan cheese per fillet that you will broil. Add just enough mayo to form a thick paste, then thin it with the lemon juice. Add seasonings to your liking. YUM!!
(Other recipes call for butter, but I find that if I use butter, it drains off of the fish and onto the pan. Leaving the butter out helps to keep the cheese topping on the fish!)
