8 ounces uncooked spiral pasta
2 large onions, chopped
1/2 pound fresh mushrooms, sliced
1/2 cup chopped green pepper
1/2 cup butter
2 garlic cloves, minced

This is an old family recipe handed down through many generations of my husband's family. Roux is made by mixing oil and flour to make a paste and then cooking it until it is brown. We like ours dark brown.
Cook and drain pasta in separate pot. Add shrimp and spinach in lest couple minutes.
