This is a great Sweet Potato Recipe that brings out the flavor of the sweet potato's with a smoky taste from the Cumin, Paprika and Ginger. The Yogurt lime sauce has a great sweetness to offset the spiciness of the Sweet Potato's. This is the best Sweet Potato Recipe we have had!
Recipe modified slightly from the back of Bob's Red MIll 8 grain hot cereal package. Delicious muffins. I added dried cherries and white chocolate chips (of course these aren't included in the nutritional info!)
You actually need 2 sweet potatoes, peeled and sliced. These are truly delicious and so much better than french fries. I have this with turkey, chicken or sirloin burgers.
