Based on the tightwad gazette universal muffin recipe - can substitute for the grain or pumpkin or sugar. Add spices to taste - approx 3 tbs of cinnamon/nutmeg is good here.
Whole wheat flour, low in sugar and fat; and still completely delicious! These pancakes are so quick and easy to make; I like to to spread mine with peanut butter and organic honey. They also taste great with 1/2 cup of blueberries added to the batter.
These muffins are moist and nutritious. I added 2 Tbsp of ground flax seeds in place of the egg I was missing and they came out great. Next time I am hoping I will have applesauce on hand and I will sub that for half of the oil to cut the calories even more.
While Kraft Mac & Cheese is by no means a "health food" it still is a comfort food. This is how I've been preparing it since switching to smart balance buttery spread several years ago. Even with my substitutions it is still very caloric and high in sodium, simply because of the way the company processes the mix. My goal in making the substitution was to reduce the calories while still having it taste just as good. If prepared according to the package directions a 1 cup serving = 410 calories. Using skim milk and smart balance makes a 1 cup serving 375 calories. Granted the 35 calorie difference isn't huge, but every little bit helps when you're trying to lose weight and still want some of your old favorites.

I used a mixture of orange flavored dried cranberries (Craisins) and Golden Raisins that I plump before adding to the flour mixture.
