This is my twist on my mom's recipe which she always makes at Christmas time. My mom's recipe uses peanuts as well but they add a lot of extra calories so I leave them out to try and make this a little healthier.

This is a slightly healthier adaptation of my Mom's wonderful blueberry muffins...my husband claims they are the best he's ever eaten!
