Mix first seven ingredients together with a spoon or fork. Not an electric mixer. Bake 40-50 minutes at 350 in a 13x9 or two smaller pans.
Mix last four ingredients tog while cake is baking. Spread frosting on cake while still warm. Sprinkle with chopped pecans. 24 servings
Make at least several hours ahead, or overnight, to give the flavors time to meld together.
Makes 14 cups.

This is a 'back to basics' guacamole recipe which I tried with the only things I had on hand. It was so good, I thought I should share it. I made mine with one extra large avocado from my backyard and an organic vine-ripened tomato from the market. HINT: To prevent it from browning, add lemon or lime juice.
