Modified from the Joy of Cooking. Easy to make. Great for a tailgate. Always gets rave reviews! Keep chilled over ice. I usually serve with veggies (cucumber slices, baby carrots, etc.) and Ruffles Light. One serving = 1/4 cup
Classic tuna salad with egg, lots of protein, low carb. You can eat this in lettuce wraps, low carb wraps, or if you need whole grains, eat on whole wheat bread.
Surprisingly good. My turkey-burger hating kid has eaten these several times and hasn't figured out they're turkey.
I can't take credit for this - I adapted it from a Betty Crocker recipe, but substituted strawberries for blueberries and made some more low-cal substituions.
