This is my taco salad, made with natural ground beef (no hormones, etc. allowed in this house), fresh veggies, and a whole wheat tortilla bowl.
I like to make my tabouleh with quinoa instead of cracked wheat. It has more protein and is a whole grain. Plus I add tons of other veggies. Orange juice gives it a little twist. Lots of fiber in this dish!!!
If you're tired of all the pre-made salad dressings at the supermarket (like I was), try this delicious home made vinaigrette. This has a sweet, garlicky flavor and the Splenda makes it carbs diet friendly. Plus the added fiber helps your salad to be re even more filling.
I made this because I can't eat salsa because of the salt and heat. You may want to use a spicier salsa if you like the heat but can't have the salt. It's kind of chunky to use with chips, but I love putting it on top a bed of greens.
