Easy salad which can be refrigerated up to 2 days.
This is one of my favorite spring/summer salads! It is lemony, light and fresh tasting. The addition of more in-season veggies and/or more protein can take this from side salad to main course. Mangia!
Great summer salad. Use Dreamfields low carb elbow macaroni for low glycemic salad.
DRESSING:
100 Cal per
Juice of 1 lime
8 tablespoons olive oil
2 tablespoons sesame oil
6 tablespoons soy sauce
1/3 cup brown sugar
3 tablespoons fresh ginger, chopped
2 cloves chopped garlic
2 hot peppers or jalapeños, chopped
More chopped cilantro—LOTS
Mix together salad ingredients. Whisk together dressing ingredients and pour over salad. Mix with tongs or hands and serve on platter.
*Dressing keeps up to three days before serving, WITHOUT cilantro
Sinfully delicious! Yes, a bit high in fat, but lowfat/nonfat cheeses can be substituted without changing the decadent flavor combination.
