A quick way to prepare potato salad but eliminating peeling and boiling the potatoes. Less prep time and less mess. For added flavor you can add a cup of diced ham or 4 slices cooked 1/2 inch pieces of bacon (optional).
I could't believe how GOOD and satisfying this salad dressing is. You use 1 teaspoon of mayonnaise...YES...I said 1 teaspoon
I made this delicious salad for myself and my daughter and had plenty left for a friend. We are "Vegan-ish" and don't add chicken, though it would make this a complete meal...feel free to add chicken breast to up the protein, or a bit of whey protein powder.
