A wonderful recipe. It gets better the longer it sits. I use a combination of red, green and yellow peppers, about 1/3 of each and the salad just pops with color. If you only use one color, I'd go with red.
I had an abundance of fresh veggies and wanted to get them cooked up. This was quick and easy and oh, so good! Made it again the next night 'cause it was so tasty.
