A little experiment that turned out for the better. These berry-filled quinoa muffins were created as a way to use up a container of cooked quinoa that had been sitting in my fridge for a few days. I wanted something healthy but all the recipes on Pinterest called for quinoa flakes or flour - so off I went. These muffins are large and filling - they would make a great breakfast on the go or an afternoon snack to curb the munchies. Would be worth trying with your favourite bulk foods mixed in - chocolate chips, craisons, banana chips - any mixture will likely be delicious and guilt free! Just less than 160 calories per muffin - Enjoy!

Another bored night. I decided to try baking a low carb batch of cookies, which turned out to be quite a delight :)
I use this recipe to put to use berries (usually strawberries) that have gone a little past ripe and can no longer be used for eating fresh. I freeze berries (or bannanas, stone fruits, etc too!) and wait until I have enough to make a batch or half batch. The bread freezes well afterwards and satisfies sweet tooths and fruit needs with only 200 calories per 1 inch slice.
Beat the eggs, yogourt and flour. Add the spices. Then add the rest of the ingredients except the sesame and wisk by hand with a spatula. Oil a cake pan put flour to avoid sticking the batter. Pour the batter in the pan and sprinkle with the sesame seeds. Preheat oven to 375 degrees and bake for 45 minutes or untilits golden and ready. You can also check with a toothpick to se eif batter is still raw.
My fiance and I love chicken wings, but when they are fried they are just terrible for you. I came across this recipe and we LOVED it! These wings taste as if they were fried. They are pretty incredible! I make them for football watch parties all the time and everyone enjoys them. They are definitely not for every day, but better than buying some from a restaurant. ** The nutrition information DOES NOT include wing sauce.
