Recipe from the back of the Semi-Sweet Morsels bag, with substitutions
Found this in one of my cook books. It is a family favorite! Makes for great leftover meat loaf sandwhiches too.
Great low calorie version of the original! Feel free to add fruit for extra nutrition!
I adapted my favorite zucchini bread recipe, by substituting silken tofu and 0 calorie sweetener in place of eggs and sugar.
Also added chocolate chips in place of chopped nuts!
The ingredient database didn't have Xanthan gum or coconut extract.. but those calories are pretty minimal. At most you are looking an 80 calorie bowl of deliciousness :)
I love strawberry & DH loves peach, so I always make a half & half version of this cobbler. Other than store bought it just doesn't get easier than this. Be sure to melt the margarine in the oven as you preheat, it really makes the difference!
Oh, yum! My family loves this! I use an artificial sweetener and almonds instead of ramen noodles to make it suitable for my weight maintenance needs. I double the dressing but you can lower sodium or fat if desired by cutting half the salt or oil.
