Great appetizer for Thanksgiving. I got compliments from people who claim that they usually don't like brie. Good with pita chips, melba toast or Carr's crackers.
Delicious, moist, light pumpkin muffins. You can cut back on the brown sugar and molasses if you like, substitute raisins for pecans. The possibilities are endless. It is low calorie and decadent. Enjoy!

A quick an easy assembly for a crustless (gluten-free) and lactose free organic pumpkin pie.
This is a vegetarian dressing or stuffing made with dried crandberries, rice and almonds.
learned about this "comfort food" recipe at a Weight Watcher's meeting. Each serving has a four points value. It's great as leftovers or for taking to work for lunch and warming up in the microwave. It reallys satisfies my craving for pizza and makes a great substitution! Also, very low carb.
This is of course great as a side dish but can be a wonderful & balanced main dish when made with the Acorn Squash Seasoned & stuffed w/Stuffing - Vegetarian Vegetable Chicken.
This uses fresh pumpkin puree. Roast a pumpkin at 400º until a fork inserts easily; scoop out pumpkin meat and blend until smooth; let hang in a cheesecloth for an hour until all the excess liquid drains. It should be about the same consistency as canned pumpkin, but tastes so much better!
This is higher on the carb count than I would like, but the family loves it. A serving for keto folks is 1/4 cup.
