This is originally a vegan recipe that we have altered a bit to include Quinoa, giving the pancakes a slight nutty flavor, and using real milk.
This recipe is a modified version of the Delicata Squash Bisque recipe I found on VeganYumYum. I cut the recipe in half because I am only cooking for 2. I replaced the roasting oil with PAM and used half of the amount of cashews to cut down on those extra calories but still get the flavor.
Warm. A little spicy and tangy. I use homegrown sissoo spinach (which must be cooked) and canned artichokes in water. Since I rarely have cream cheese or parm, I use white organic cheddar. My family is always happy.
This is a quick easy Marinara that is great just over whole wheat pasta or with spaghetti and meat balls. The nutritional values do not contain the pasta or the Garlic Bread. Enjoy!

No meat in this burger, But satisfies the urge for a traditional cheese burger.
This isn't my recipe but rather comes from blogger NYC Pink (nycpink.blogspot.com) with one small modification (less oil / more applesauce). When I make these, I don't measure out the spices but rather use 2 Tsp. pumpkin pie spice. Please visit the blog. She's pretty darn cool.
