So, I have found I can sub in a GF chapati flour mix in bread recipes from Gluten Free on a Shoestring recipes. This is the sub I have found works well, used to make her thick crust pizza dough. I usually get about two 14ish inch pizzas from it, though that can vary. Adjust your servings to suit how many slices you get.
Just making latkes a more balanced main dish, and getting more veggies into my family. In retrospect coconut flour might have been a better flour choice, since it is more absorbent
