Serve over jasmine rice. To add extra flavor to the tofu, sauté it in a small amount of oil until golden brown on all sides before adding to the curry.
I've made this with either Hubbard or Butternut squash. The Hubbard has a wonderful flavor, but the hard skin makes it very hard to work with. The Butternut squash is easier to work with, and also has a nice flavor.

Love using this as a salad dressing on a cabbage coleslaw. Just shred up 3 to 4 cups of cabbage and a large carrot, then pour salad dressing over and mix well. You can also use a precut package of cabbage slaw or broccoli slaw.
