Great recipe ! I left off the cheese and substituted the sour cream for nonfat yogurt to save some calories. It tasted fantastic. Next time i'll also try some variations with adding some mushrooms and maybe some garlic. But i love it and it's easy to make.
Thanks! This was really good. I went with some suggestions and used corn tortillas, sauteed the onions and peppers, garlic, extra hot sauce and nonfat yogurt. Also added fresh mushrooms and sage that I had on-hand. Really fresh and satisfying!
We loved this and my husband keeps asking me to make this again. I used a mango salsa. The only drawback is it is a bit high in calories as one tortilla probably isn't enough for dinner.

They actually have 392 calories each. I think that the calories for the tortilla were not factored in.
This was great! I used nonfat plain yogurt in place of scour cream and added Cumin, Chili Powder, Fresh cilantro and about 1/2 c. Black Beans to recipe. I also used whole wheat tortillas. Very healthy and good, the family loved them.
How can a serving of this be 141 calories when one 10" tortilla is over 200 calories?
This sounds like the chicken enchiladas I make but with more vegetables. I am looking forward to making this. I will use some high fiber tortillas.
Everyone enjoyed this. The sauce is fantastic alone. It tasted like you'd spent hours in the kitchen. I did add packet of low sodium taco seasoning to the chicken for an extra kick. Great recipe for entertaining.
These were absolutely wonderful. I served them on a bed of lettuce with a side of refried beans (low-fat, of course). I didn't use all the salsa/sour cream inside so I put a dollop on top. One doesn't look like it's enough, but it's very filling.
