Introduction

Number of Servings: 6

Ingredients

    4 large potaoes peeled and cut into 2-inch squares
    3 hardboiled eggs sliced and halved (you can boil in same pan)
    pinch of parsely
    pinch of tumeric (optional, adds color)
    4 pickle spears cubed
    a little pickle juice to taste
    1/4 cup regular mayo
    1 cup chopped celery
    1 small onion sliced and diced very small


Directions

Put potatoes and eggs in boiling water and cook just until potatoes are soft but not mushy
while that's going slice and dice all the veggies and put into a big bowl along with the mayo.
when the potatoes are done, ladle them into the bowl so you get a little water and just let it sit there steaming on top to soften the celery and onion
run cold water over the eggs until they are easy to handle and they will peel very easily, slice and add to mix
stir and salt and peper if desired and add tumeric and paprika if desired.
chill and serve
