Introduction

Ingredients

    Spinach, cooked, 1 cup
    Pine Nuts, 1 tbsp
    Low fat cream cheese, 1 oz
    Onions, 0.5 tbsp chopped
    Parmesan cheese, grated, 2 tbsp
    Paprika smoked
    Salt

Directions

makes 2 1/2-cup servings
Preheat the broiler.
Cook the spinach. Squeeze the water out of it very well.
Toast pine nuts. Set aside.
Chop onions as small as you can.
Heat up cream cheese at a low heat in frying pan. Add chopped onion and mix well. Add spinach and toasted nuts, mix and heat it through.
Divide the mixture and put it in two ramekins. Sprinkle grated parmesan cheese on top and add a dash of smoked paprika.
Cook under the broiler for 2 minutes.
Serve hot.
