Introduction

Ingredients

2/3 c. lo-carb whey powder
1/3 c. 2-min oats
1/2 c. whole wheat flour
3/4c. Kashi Go Lean Cereal
2 tblsp. Whole Flax seed
1.5 tbsp. Baking Powder
1 tblsp. Ener-G egg replacer
3 tblsp. Cocoa Powder
1 tblsp cinnamon
1 tblsp pumpkin pie spice
1tblsp vanilla
1 c. frz. banana
1c. frz. strawberries
6 pkts stevia
.25c. sunspire grain sweetened chocolate chips
Directions
1) Pre-heat oven to 375 fahrenheit
2) Prepare either 3- 6 c. muffin tins or 3-12c. mini muffin tins
spray with omega blend or your choice of cooking spray: regardless of whether you use paper liners or not you need to spray due to low fat content otherwise they will stick to the paper
2)Puree Bananas and strawberries, milk, vanilla, and applesauce in blender and let rest
3) Then mix all dry ingredients together in a large mixing bowl
4) Gently fold the puree into the dry mix adding the chocolate chips last. Mix only until ingredients are blended- Do Not Overmix
5) Spoon into tins filling 2/3's of the cups with batter
6) Place on center rack in middle of pre-heated oven
7) Cook large muffins for 12 minutes and small for 6 or seven
