This is my take on the oatmeal cookie recipe you find on the inside of the container of oatmeal. These substitutions can be made in most any cookie recipe to lower the fat and make them vegan-friendly. I replaced butter with canola oil and the eggs with unsweetened applesauce, replaced a portion of the all-purpose flour with whole-wheat, and added dark chocolate chips to the mix to conquer my chocolate cravings. Enjoy!
This is a fairly standard, but sugar-free, apple crisp which uses ivory teff flour instead of regular blended in with the oatmeal. I adjusted a recipe that came with my teffco order. Teff is the smallest grain in the world, and originated in Ethiopia; it's nutrient rich and gluten free.

These cookies are almost half the fat and 1/4 less sugar. The applesauce makes them moist and reduces the butter needed. They are under 200 calories and tasty! Enjoy some almost guilt free cookies!

This is a great recipe if you want a super quick yet satisfying chocolate treat. I usually split it into two servings, but with only 150 calories, not to mention the probiotics of yogurt, no fat, and a whopping 25 grams of protein, you could easily get away with having a piece of fruit and some toast on the side and turning this into your breakfast!
