I had this at a healthy restaurant and had to make it at home. It is soooooo good.
This Southern mayonnaise-based slaw is heavy on the carrots - flex them as you like. There's more lemon than sweetner because my family likes coleslaw a bit tart but you can adjust the tartness and the amount of mayo. The olive oil mayo tastes just fine!
a simple mix of beans, vegetables, and dressing. great for cookouts or potlucks.
I got this recipe from Taste of Home Magazine. It brings back memories of some of the potato salad I have eaten over the years. I hope you enjoy it as much as I. I was surprised at the low calories per serving.
1large butternut squash
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
1 cup quinoa uncooked
600ml vegetable stock
25g sundried tomatoes in oil, drained and chopped
100g firm goat's cheese, roughly chopped
handful fresh sage leaves, chopped
A light summer salad that can be eaten alone or as a side dish during a summer BBQ or any time of year.
Great side dish for grilled chicken! Festive and colorful! Quick to prepare....
A little heavy on calories but if served with grilled chicken, minus skin very satisfying meal...
In the summer I like to go crazy with the fresh vegetables..... Every one has cook outs and this is really easy to make and pretty to view! When the tomatoes ripen I then add them to salad as well. That's the great thing about this salad, any fresh vegetable works!
I use olive oil as it compliments the vegetables nicely when mixed with a Italian red wine vinegar. Fresh herbs are best, but dried works well.
This dish could be used as main dish by adding sliced peperoni, feta cheese, hard salami, etc..... adjusting calories and portions accordingly.
