Just something random I threw together for dinner!
A twist on the classic Cheesy Broccoli and Rice Casserole - by adding some MEAT!
My mom used to make a similar recipe but instead of rice she used Mac & Cheese. I thought this may be a healthier version.
I decided to add some bacon to my normal turkey meatloaf and it made a huge difference and it taste much better now.
This is an easy dish to make and everyone loves it. I put mine over brown rice or egg noodles.
Also, you can use any type of cheese that you like. I usually use a cheddar or mozarella lowfat cheese. It goes excellent with some Texas Pete hot sauce on top :)
Hints:
• For a spicier version replace chopped green chiles with Mission® Sliced Nacho Jalapeños.
• Top with shredded cheddar cheese for a cheesy golden brown crust and even more flavor.
• This casserole mixture can be made several hours before baking; put in the oven when your family gets home or your guests arrive.

Two large Portabellos Mushroom sliced in large pieces
One large chopped onion.
One clove garlic
One Tb of Worcestershire Sauce
Two Tb of olive oil
Saute until soft. Sprinkle with a dash of Balsamic vinegar
