This eggplant parmesan has a more interesting sauce than the usual marinara, and it's easy to make while the eggplant is being oven-fried. Flavorful and filling, while still being healthy, it's far better than the original fried version (imho). Makes 8 servings (roughly 5-6 slices of eggplant plus sauce each).
Lots of flavor and texture to this sauce keeps it interesting and satisfying.

Even though I'm not a huge fan of dairy products, they can be a helpful way to start working towards eating less meat. I created this recipe after a special request from a Personal Chef Services client, and it's a big hit with her family. Yes, you can use bottled spaghetti sauce, but it's so easy to make a basic sauce from scratch with higher quality ingredients and it gives you something to do while the water boils for the pasta, so it's worth a little extra work.

I use ground turkey and ground turkey sausage, but you can replace it with ground beef and ground pork sausage.

Next time I will use lower calorie options for the butter and calculate new stats. This is all I had in the house today. I would suggest not using the bacon bits that are really crunchy. The best real ones are Hormel.

I got this recipe from my Better Homes and Gardens magazine. It is one of Lisa Lillien's recipes. I changed it up a little, but you can use egg product instead of regular eggs and she used sweet peppers in her pasta that I did not include.
