Essentially Sir Fry without the stir or the fry, wrapped in an easy crepe!
Crepes can be made with milk or soy milk, so good for lactose free diets as well.

to substitute buttermilk ad 2-3 tsp of cider vinegar or lemon juice to mmeasuring cup then add milk substitute (plain soy light) to make 1 cup and let sit 10 mins
This is my version of a chocolate zucchini bar. The original version had more eggs and less flour which made it spongier than I like. This is great by itself or topped with a cream cheese frosting.
This is a cookie recipe that we've modified after moving dairy-free for an allergy and nixing processed sugar, etc. We use whole wheat flour, and you can add any goodies... dried fruit, nuts, etc. The cookies are soft when warm but will firm up after cooling.
We lived in Greece, just outside Athens, for a year while my father worked at the Oceanographic Institute. A block or two down the street from us was a fabulous fish restaurant, "I Garitha" - The Shrimp, in Greek. They had a wonderful fish soup or stew, which I kind of replicated - it's as close as I could come. I made this all through college and grad school - it's easy, filling, not expensive, and healthful!
