I found this recipe online and made it with a few conversion for less calories.
Cut tops of peppers and dice the little bit of pepper from the tops for your saute mixture. Prepare Cousous according to package, saute veggies, mix all together. Stuff peppers with the cousous and veggie mix and cheese. Bake
An easy to put together chicken salad good on its own, on bread or stuffed in a pita. Use rotisserie chicken light meat for calorie and time saving
Add more or less of the Curry Powder and raisins to taste. I use left over chicken breast from a precooked Rotisserie Chicken purchased at the grocery store. If the chicken is hot, and not left over, let it cool in the fridge before using.
This recipe is from Pillsbury.com. I substituted egg substitute for the 4 eggs, and 2% shredded cheddar cheese for regular, to reduce calories, fat and cholesterol. Yummy and great for lunches.
This is a guilty pleasure, a good amount of fat but no added sugars or carbs. Enjoy with some dijon mustard.
