I got this recipe from the Hungry Girl web-site but swapped the wheat pasta with Quinoa pasta. Great low cal way to enjoy macaroni and cheese for those of you who don't want to give it up!
I have lived in the South all of my life and this is the only way I know how to cook collard greens. After reading the nutritional information I don't see any reason to change them they are wonderful just the way they are.

A simple twist on traditional mashed potatoes. Just a bit of added protein.
