Amazing summer salad. Would be great served over lettuce or with grilled shrimp.
This is a variation of a salad that my mother thaught me to make. She in turn, got the recipe from a French cookbook. I modified the recipe by substituting home made mayonnaise with low fat mayonaise and adding dijon mustard. My mother used to serve it stuffed in a large tomato, but for the sake of economy, I just serve it with sliced tomatoes.
This broccoli slaw can be kept in the fridge for up to two days before your picnic or next event!
Make the day before you want to serve this delicious, but crunchy salad. Otherwise it has a really sharp edge with the dressing.
This is a wonderful salad to help get in more veggies. Goes great with a BBQ. Travels and keeps well.

The colors and taste of this are wonderful. We had it first for Christmas Dinner, but it will be a staple in winter!

Cole slaw I really like without oil or mayo. Can use maple syrup in place of agave.
This is a great light summer veggie salad. Not a lot of prep, just dicing. Best when chilled overnight and served the next day. I like the strong flavors of onion and vinegar, but if the listed amounts are too much please feel free to change them to fit your tastes.
This dressing is thin (runny) for better coverage on my salad. Almost a wash, but not quite. The ranch flavor is strong.
