This is a great vegetarian summer salad, and many different veggies can be substituted according to what's on hand and personal taste. This may be a little plain for some people, so feel free to spice it up with cumin or cayenne pepper, or whatever your heart desires! :)

changing the mayonnaise for light mayonnaise changes the calorie count from 330 to 265 per serving. I've never tried this but it might be worth a try. also I estimated that it serves 10 people. it's a family recipe and we always just make it and serve it until it's gone. (which doesn't take long around our house!).

Peel and slice cucumber
Rough chop cabbage (about 1/4 head of cabbage)
Add feta cheese on top
Mix dressing;
vinegar, oil and sugar
drizzle over slaw
