This is a warm salad - cooked mushrooms poured over mixed greens. The warm mushrooms are supposed to wilt the lettuce a bit. Try to use the pre-packaged mixed colorful lettuce which is sold in Grocery stores. I tried a similar salad at an Italian restaurant, but they used Oyster Mushrooms.
One summer I combined my love for onions with a bumper crop of tomatoes and a homemade balsamic dressing. The result was this salad that receives thumbs-up approval whenever it's served
I found this receipe while trying to find a good use for some leftover barley. It's packed full of fiber, very colorful to the eye and gets better with age! A full 10 grams of fiber per serving! Don't let the jalapeno fool you - the dish is not a hot spicy, but more a flavorfull, subtle spicy. Enjoy!
For everyone tired of store bought dressings, this is fast, cheap and low-fat to boot! Makes about 1 cup, 2 tbsp per serving.
Carrots and celery root (AKA celeriac) combine in a crunchy and slightly sweet bowl of goodness accented with dark raisins and just a hint of curry and cumin for zip.
If you've ever been like me and forgotten to pick up a Caesar salad kit or dressing before a party, this quick-fix dressing might save your (literal) bacon! Makes enough for two entree salads (about 1 lb of greens).
Cool, crisp and deliciously tangy, this julienned salad of carrot, parsnip and cucumber is quick-soaked in a rice vinegar brine for an unusual BBQ side or accompaniment to a rice bowl (leftover brine is amazing over cold rice too!). Serve with chopsticks for a fun Asian night. Makes 3/4 cup servings, NI reflects the entire brine mixture being consumed.
This is a modified version of a recipe I got from Allresipes.com to make it much lower in fat and calories.
I don't always eat a lot of meat, so this is a way for me to get in some protein via nuts and some good healthy oils too. You can substitue FLAX OIL in place of the Olive Oil to amp up your daily dose of ultra healthy Omega Threes, which is what I generally do and I also make this as a main dish and maybe add in a bit of leftover boneless, skinless cooked chicken breast! Yay! But as it stands, this is a Fun Salad to serve when you are sick of your boring diet routine and want to spice things up with a bit of Tableside Flair!! Hey, can we count this bit in as exercise...har har har!!! (And of course you can literally spice it up with hot pepper sauce or dried peppers to your taste! Go wild!)
Note: Feta or Gorganzola or Good Ole Blue Cheese (or any other (salty/savory/sweet???) firm cheese that strikes your fancy and goes with the ingredients...like Peach Gorganzola Cheese (This Trader Joe's Cheese has little peices of Dried Peaches in it and it's GREAT!!!) will work with this recipe. You can also shave some Parm/Reggie onto each plate too after service. Experiement with your party leftovers from your cheese platter....or just grab what's already there on the shelf in the ole pantry or fridge!!!
Lots of veggies. A lot of flavor. Light with a little zing. 2 cups is a serving
A delicious, sweet and sour beansprout salad I've had served with my meal at Korean restaurants. Alter the amount of pepper flakes to taste, I like it medium-hot.
Take this recipe and add the potato salad dressing by me as well and its great and gets better the longer it sets.
A light, fresh starter for your next Spring or Summer dinner party. Rich in antioxidants, healthy fats and vitamins.
Lots of healthy ingredients get into this no-cook salad. It's a perfect dinner meal for one with a cob of corn or a crusty roll.
Fresh, bright and full of Asian flavour, this is a great go-to lunch with some shrimp or tofu added in!
Lower in fat than your traditional coleslaw dressing with one heck of a kick. Purists will scoff at the fat-free Miracle Whip, but I hate the taste of regular mayo. Use what you like! 2 - tbsp servings.
Dried cranberries add a nice, tart "bite" to this low-fat, creamy tuna concoction, while the celery adds a wonderfully satisfying crunch. Excellent for school lunches on whole-wheat bread or in pitas!
Without the mayonnaise and heavy cream traditionally found in the indulgent "white" dressings, this tangy garlic and herb-filled mixture is still equally indulgent!
A spicy, high fibre and vegan main dish combining an abundance of black beans and rice traditional in the South and Cuban cuisines that can be served hot or cold. Full of antioxidants and vitamins!
This is a great way to nix a craving for Japanese food when you don't have a good sushi place around or you don't feel like shelling out for some rolls. Add some sashimi grade tuna and wasabi paste too for a great zing!
Traditional summer recipe the way grandma made - except she had saccharine and not splenda.
Can substitute Canadian Bacon for the turkey bacon.
