A super simple pasta dish with warm Mediterranean flavors. Makes a great main dish with the addition of meat.
ate these in Puerto Rico on our honeymoon almost every day they were so delicious. I keep trying to find the right recipe to duplicate them... this looks like it will be close!

Complements of Eating WEll Magazine! I made this for a memorial day cookout and it was delicious.
This simple, fresh-tasting salad adds delicious variety to grilled foods, such as salmon, halibut, chicken or pork. Browning the corn in a skillet gives it a nutty, caramelized flavor that contrasts with the sweetness of the mango. -From EatingWell
This recipe originated from my sister who got it from her mother-in-law and has been perfected over the course of 40 years. The only adjustment that I have made is the use of melting chocolates because they are easy to use and more predictable (She uses chocolate chips and parafin)

Quick and easy way to cook an individual portion of flat bread (almost like a cracker). Plus, it's got a majority of whole wheat flour! Try it with olive oil and balsamic vinegar!
Thicken the yogurt by draining the whey from it ( about 5+ hours) through a coffee filter.
Grate cucumber and sprinkle with salt. Let the cucumber rest for 30 min. in a sieve over a sink or bowl to drain moisture from it. Pat dry with paper towels.
Mix the onion, minced garlic, dill, cucumber, salt, pepper & lemon juice into the yogurt.
Great as a dip or as a sandwich spread.
Enjoy!
Very good as a dip on its own. Adding a 1/4 to a 1/2 of tomato to the mix may be good as well. Cilantro may also be a good herb to try instead of the sage, or be daring and try both!
