Deloris posted this recipe in the cooking team, so I thought I'd go ahead and enter it into the tracker so everyone could have the nutritional info. I did substitute 1 cup of the sugar for Splenda and egg beaters for the 2 eggs. Makes about 5 dozen.
The perfect side dish for fall and winter meals. You can omit the bacon to make this ultra low-fat and healthy.

I try to cook with a lot of non-processed whole grains, but rice gets boring. I started playing with different combination of grains, herbs, flavours, nuts, and veggies. All ingredients are optional or substitutable. play with it and enjoy! Quinoa and Millet are a nice blend because they both take 20 minutes to cook, fallow 1:2 grains to liquid ratio, complement eachother in texture and taste. also millet is much cheeper then quinoa, so mixing them is good for teh budget!
Yummy, Easy, Fresh and Filling. I made this pesto when my garden Basil grew out of control and I needed to do something with it. Its awesome on chicken, fish, or pasta. It freezes well so you can enjoy the taste of summer in the middle of winter. Enjoy!
Half of my extended family is vegetarian, so our Thanksgiving and Christmas Dinner spreads include a wide range of meat-free dishes. In fact, some years the turkey is a side dish to the veggie feast. This is one of my favorites. Its beautiful to look at and super tasty. I hope I've got the portions right; there might be some stuffing overflow. If there is, mix it with grains or use it to stuff a pepper or squash.
I made the crumble part of these a bit lighter on the fat and sugar and with whole grain flour in order to counteract the sweeter Butterscotch Apple Pie Filling I had on hand. I was definitely pleased with the result - and my dad was too!
While I was making this turkey and vegetable soup, I noticed that (almost) everything that went into it was divisible by 3! Vibrant turmeric, rosemary and thyme add herbal notes to the homemade turkey stock, while carrots, peas, leeks, celery and potatoes, along with a White Swan squash round out the mix.

You could try pouring this blend into a prepared crust in order to satisfy your culinary sensibilities. Beyond that - my suggestion would be to look elsewhere at some of the other fantastic pumpkin piepumpkin pie recipes out there. But those of you who want to whip up a pumpkin pie that is ridiculously quick and easy, with a gorgeous creamy texture, and then move onto other things - give this a turn in your blender. I served this up to some of my most discerning pigs a few weeks ago, and everyone commented on how fantastic the texture was; as well as the delicious flavour.
